Would you like a plate of cookies? Our sweet friends across the street brought over a plate of peanut butter cookies (thanks Abby!) a few weeks ago, and I quickly discovered that the pups absolutely LOVE peanut butter cookies. Ever since then, I couldn’t get them out of my mind!
So today, our 3 little cookie monsters and I donned our aprons and did a bit of early birthday baking in honor of our soon-to-be FIVE-year old Faith’s upcoming celebration this Wednesday! (Our Bf has a special knack for remembering birthdays…she has everyone’s birthdays on her calendar and her official countdown started weeks ago! )

I had to keep Bf from licking everything! (Not just spoons either! The edges of measuring cups, etc. she’d just stick her head into the bowl and try to lick the batter!! Oh Bf….)
Hp especially loves to measure. He pours in exactly up to the line…So precise! (and of course, SO Hudson ).
And little Bg just loves to help in any way…whenever the mixer goes, she steps back with her hands over her ears saying, “Too wowd mommie…too wowd!”
Gotta have the classic PB criss-crosses! I think they did a great job, don’t you?
We prefer them plain, but still- just had to add some M&M’s to one tray (extras from potty-training) for sharing!
What’s so special about these particular peanut butter cookies? Well, besides the fact that you only need THREE ingredients you most likely already have at home, they are super quick to make, bake, and yummie to EAT! (These would easily fall into the ‘Easy-Peasy’ Recipe category).
Hp is our resident kitchen gadget/appliance guru. Once he figures something out, there’s no stopping him…he’s had the Kitchen Aid down for a while now!

I love how these don’t need as much sugar as your usual cookie recipe, there’s no flour, and they are packed with protein too. Don’t get me wrong, this isn’t necessarily what I’d call health food, but if I had to give our pups a homemade-dessert cookie, I’d say these would be it. *If you have little ones, this is a great one to get them having fun and “helping” in the kitchen!
We ever-so-slightly adapted Shirley Corriher’s recipe from BakeWise. She uses crunchy peanut butter, but we just used creamy, because that’s what we had. We also added just a pinch of salt, because we like ‘em that way . Our kids love things not too terribly sweet, but if you prefer a sweeter cookie, you can always add a bit of sugar. Also, we used our mixer, but you can use a regular ol’ wooden spoon- it’s that simple!
3-Ingredient Peanut Butter Cookies
- 2 cups peanut butter
- 1 cup firmly packed brown sugar
- 2 large eggs
Yes. That’s really it! Pre-heat oven to 350 degrees. Put eggs and sugar into a big bowl and mix together. Stir in peanut butter until thoroughly blended. Drop in heaping tablespoons (more or less depending on how thick/chewy/crispy you like them) onto cookie sheet. Using a fork, make your criss-crosses, and bake for 9-10 min. or just until edges begin to brown. The pups like ‘em crispy, so we made them flat and baked their batch for a couple of minutes longer.
Recipe makes 36-ish cookies.

Peanut butter tends to leave one’s mouth dry, so we chose to wash these down with shots of ice-cold pink lemonade!
There’s just something about drinking out of those itty-bitty cups…
